Our Howard’s Cove Malpeque oysters (Crassostrea virginica) are considered by many to be the gold standard by which all other oysters are judged. Malpeques are the product of the nutrient rich waters of Northwestern Prince Edward Island. Howard’s Cove Malpeques may grow naturally on the lease, but the bulk of our oysters are purchased during the spring relay fishery, private leases or from the fall, clean public fishery. They are all of marketable size when we purchase them for storage on the sub-tidal hard packed red sand and clay shallows of our lease to await further processing or resale.

Our Malpeque oysters are primarily hand harvested by means of tongs, which have minimal impact upon the ecosystem, and thereby assure the prosperity of the resource, the industry, and the environment. It warrants mentioning that like so many of our products, the Malpeque oysters are harvested on a per order basis. The oysters are brought ashore to our facility where they are immediately cleaned, packed and sent down for distribution. Our Malpeque oysters are available in a variety of sizes and grades. Cooke’s Cocktails

Cocktail Oyster is a term used to describe an undersized Eastern Oyster which measures less than 3" in length (50 mm or more and less than 76 mm). Good news for the industry is that the catchy name appeals to customers and is gaining market acceptance. The round, consistent shape of the oysters, salty/sweet taste and good meat yield make it a desirable product and a popular treat for first time oyster samplers.

The Cocktail Oysters are grown off bottom from seed or spat stage on non commercial leases and are strictly controlled through a DFO permit and policy on harvesting between non commerical fishers and registered processing plants. It generally takes 2-3 years for the Cocktail Oyster to reach their market size.
